Ingredients

  • 4 eggs

  • 1 T. milk

  • 1/3 Cup parmesan cheese

  • 1/8 tsp. garlic powder

  • 1/2 tsp. basil

  • 1/4 tsp. salt

  • 1/4 tsp. pepper

  • 2 medium onions sliced

  • 2 tsp. olive oil

  • 2 small unpeeled cooked red potatoes

  • 6 oz. cooked chopped spinach

  • 5 cherry tomatoes, quartered

Preparation

Step 1


Preheat the QuickPan. In the meantime, in a medium bowl, beat the eggs and milk. Stir in cheese, spices and onions.



Step 2


When the QuickPan is preheated, open the lid and lightly spray the heating plates with nonstick cooking spray.



Step 3


Spread potatoes and spinach evenly on the heating plate; top evenly with tomatoes. Pour egg mixture over the top. Close lid. 



Step 4


Cook 9-12 minutes, until bottom is lightly browned and top is set. Using a nonstick safe utensil cut into wedges and serve.
